Food Faster: Doctored Freezer Pizza, Loaded Edition
I decided to make a quick dinner today to get to writing sooner, so I put together two nostalgic pizza choices for an even better pizza than I imagined!
Growing up, we almost only ever had freezer pizza. It was always best when Dad would add barbecue sauce and herbs and sometimes a little extra cheese to the top of it.
Whenever we did go to a real pizza place, we were limited to only two toppings. I always chose mushroom and pineapple (controversial, I know).
Years later, as I started going out with my now-husband, I realized I wasn't limited to only two toppings anymore. I added chicken to the lineup so he could get the extra protein on whatever we ordered at Donatos (and I didn't have to endure greasy sausage).
All that culminated in tonight's delicious dinner that only took me maybe 15 minutes to put together and 30 minutes to bake.

I started with a four cheese pizza as the base.
Then, I thinly sliced three white mushrooms of generous size using the blade side of my box grater.
I rinsed and drained a can of chicken, then shredded by stabbing and twisting a fork until it was a nice texture (not mealy though, don't worry). I put as much of the chicken as I could on the pizza and then made a tiny chicken salad with the rest.
Then I grated some havarti and mozzarella over the whole thing and added little dollops of barbecue sauce across the board. I should've done more. I also forgot herbs. But that's okay!
Finally, I drained the juice of a can of pineapple tidbits (not chunks!) into a cup for my tropical-flavor-loving husband to sip on and sprinkled a couple handfuls of the tidbits across the pizza.
I baked the pizza at around 400°. The box called for 23 minutes, but I felt like it wasn't quite ready and added 5 more minutes, bringing the final cook time to 28 minutes.
Y'all, it was so good. The cheese melted into the mushrooms so nicely. The chicken was the perfect texture. The barbecue and pineapple left a sweet finish.
Doctoring pizzas is a great skill to have for those nights when you need something quick and easy. Does anyone else doctor pizzas? What would you put on them?


I'm sorry mushrooms WITH pineapple (either is perfectly fine apart from each other) is diabolical.
I also love dressing up a frozen pizza, though! Or, I should say, I love it when my husband does it lol. I'm lazy enough to eat it as-is but he always takes the extra step and adds jalapenos, hot honey, and/or whatever else he can think of.
